One Bowl Chocolate Cake

I love one bowl recipes and this is a truly delicious one to add to your repertoire, courtesy of Donna Hay’s Fast, Fresh, Simple.


  • 125g butter
  • 375g of good quality dark chocolate
  • 1 cup or 175 grams of brown sugar
  • 1/4 cup plain flour
  • 2 tablespoons milk
  • 1 cup (120g) almond meal
  • 5 eggs
  • 1 tablespoon cocoa, for dusting


Line a 21cm or 22cm round baking tin with baking paper and preheat the oven to 160C (320F). Melt the butter and chocolate, using your preferred method. I used the microwave – two 60 second bursts and one 40 second burst was enough. Pour chocolate/butter mixture into a mixing bowl and add sugar, flour, milk and almond meal, and mix to combine. Add eggs one at a time, ensuring to mix well after each. Pour mixture into the baking tin and cover with foil.

While the original recipe called for a 60-minute baking time, I found that the centre of the cake was still too wobbly and so I baked it for an additional 20 minutes. Once set, remove the foil and cool. Dust with cocoa and voila! If you’re feeling especially decadent, serve with a scoop of vanilla ice cream. My favourite is Connoisseur.
